Orzo, Tomato and Mozzarella Salad

Oh. My. Word.   I found my new favorite non-boxed real food side.   I got the method from My Recipes.com, but it’s so simple it’s really just a method.  You can do whatever you want to it!

You will need:

  • 1  tablespoon  butter
  • 1  cup  orzo
  • 1 1/4  cups  fat-free, less-sodium chicken broth
  • 1 1/4  cups  water

Heat butter in a medium saucepan over medium heat. Add orzo & cook for 3 minutes, stirring constantly. Stir in broth and water.  Bring to a boil. Reduce heat, and simmer until liquid is absorbed and orzo is done — about 15 minutes. Remove from heat; stir in whatever you want!

I added about 1 ounce of leftover Mexican cheese (NOT taco cheese — there were no spices), some pepper and some basil.   We also used chicken stock (Better Than Boullion, to be precise) and so made it concentrated chicken-y.   Tasted just like Chicken Rice-a-Roni before we did anything to it!

Other options:

  • spinach & feta
  • winter squash & nutmeg or cinnamon
  • peas & carrots
  • ham & broccoli
  • bacon & cheese
