Bread and butter pudding and Custard
Image via Wikipedia

One of my favorite frugal foods is bread pudding.   You can only make so much garlic bread and you can’t use leftover donuts or sweet bread for it.   I save up all my bread scraps (if I get to it before they start getting moldy, that is) in a baggie in the freezer to make bread pudding.

You will need:

  • 1/4 c butter
  • 2 c milk
  • 4-1/2 c cubed stale bread
  • 3/4 c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 tsp salt
  • plus whatever additions you want!

Preheat oven to 350.

Melt butter in a microwave safe dish.    Add milk, sugar, vanilla & salt and mix well.  THEN add the eggs (otherwise you start to scramble them :D).

Place bread chunks in a 9×9 baking dish.   Pour egg/milk mixture over top.   I always take tinfoil and push the bread into the egg/milk mixture so that I don’t get crunchy bits on the top.

Bake for 50-55 minutes or until a knife in the center comes out clean.

There are a TON of ways to modify this recipe!   This week, I made an egg nog bread pudding by using 1 c milk & 1 c egg nogg.   I also made a chocolate coconut one by tossing 3/4 c coconut with the bread and adding 3 T cocoa to the melted butter.

I’ve also found these variations on bread pudding:

I think its going to be a long time before I make the same one twice!

Do you have any variations on this classic that I haven’t mentioned?   Share in the comments!
