My mom, God love her, was not much of a cook. I frequently got out my mom’s red Betty Crocker Cookbook and tried anything and everything that looked good. She did make a few things, though, that were AWESOME. This is one them.
I love these cookies. They are a great way to use up all those bananas that get brown when you’re long sick of banana bread.
I have also adapted these to be a little healthier. There is less sugar than originally called for since ripe bananas are pretty sweet. Whole wheat pastry flour works awesome in place of flour. Coconut oil and butter both work great in place of the shortening, though butter makes them pretty flat. Also, these cookies are a little darker than normal because I tried coconut sugar instead of white sugar. Still tasted great, though.
Ingredients:
· 1-1/2 c. flour
· ½ tsp. baking soda
· ¼ tsp. nutmeg
· ¾ c. shortening
· 1 c. sugar
· 1 tsp. salt
· ¾ tsp. cinnamon
· 1 egg
· 1-3/4 c. old-fashioned oats
· 1 c. bananas, mashed
· 1 c. milk chocolate chips
Directions:
Preheat oven to 375F.
In a mixer, blend shortening, sugar, eggs, and baking soda. Add flour, nutmeg, and cinnamon, until combined. Add oatmeal, bananas and chocolate chips. Drop by spoonfuls on greased cookie sheets. Bake for 10 minutes.
Serves 2-1/2 dozen.

11 January 2011 at 10:13 AM (14 years ago)I have a son with OCD and he only eats 5 foods. No veggies or fruits. Sometimes i can hide them and this looks like a GREAT way. I can not wait for the roads to clear so I can try it. Does it need to be old bannanas like when your making banana bread
